SATAY SWEET POTATO CURRY (Vegan & Delicious)

Today’s recipe is a good one! In fact, it’s one of Henry’s favourite dishes of all time. Seeing as it’s a cold, wintery day - we thought we’d whip up a delicious, warming Satay Sweet Potato Curry! We even pimped out this dish with some extra delicious rice. Our friends at Vorwerk were kind enough to send us over a shiny Thermomix TM6 - which is a very cool piece of kit. We used it to make every single element of this curry - including making our own peanut butter from scratch to be used in the satay, mincing the garlic & ginger paste, and cooking everything together. Plus, it has a really awesome screen on the front that you can use to access Cookido - Thermomix’s recipe platform the contains thousands of recipes. We used it to perfectly cook our basmati rice.
