AZARI TRADITIONAL TEAHOUSE: Dizi ADDRESS: Near Rah-Ahan Sq, Valiasr Ave, Tehran 11369 Iran OPENING HOURS: 10:00AM - 11:00PM DIZI: Add chickpeas, white beans, lamb and lamb fat to a claypot. Add water and cook for 4 hours. After cooking, add potatoes and a sauce made of tomato purĆ©e. Add turmeric, lemon powder, salt, chili powder and tomatoes. - - - - - - - - - - - - - - - - 2. MOSLEM RESTAURANT: Cholo Gardan + Tahchin ADDRESS: District 12, Tehran Grand Bazaar, Tehran 11369, Iran CHOLO GARDAN (Sheep Neck): Saute sheep neck with caramelized onions. Add salt, turmeric and saffron, then add water. Allow it to cook slowly (boil) for 2-3 hours. TAHCHIN (Tadiq with Chicken) - YELLOW COOKED RICE: Start with white rice and mix in saffron, eggs, yogurt and vegetable oil. Mix and flatten and then cook in an oven. Top the square piece with saffron rice and dry barberries.
