Closed Captioning provided by Rev Time Codes: ---------------------- Tacos Al Pastor - 1:02 Tacos Gobernador - 6:30 Assemble - 8:48 Recipe: ---------------------- Step 1: Make Tacos Al Pastor Ingredients Al Pastor: * 1 lb pork butt, * 2 guajillo peppers, deseeded and soaked in warm water for approximately 15 minutes * 1 tablespoon achiote paste * ¼ cup pineapple juice * ⅛ cup vinegar * ½ teaspoon oregano * ½ teaspoon salt * ½ teaspoon cumin * ½ teaspoon pepper * 2 garlic cloves * A pinch of ground clove * Toppings: * 1 corn tortilla * ½ an onion, diced * 1 tablespoon minced cilantro * 1 slice of pineapple 1) Add peppers, achitote, pineapple juice, vinegar, oregano, salt, cumin, pepper, garlic and cloves to a blender. 2) Pour over the pork butt and marinate. Set aside. 3) Add corn tortilla to plancha to cook through. 4) Cook the pork on a plancha. 5) Top with onion, cilantro, and pineapple slice. Equipment * Vitamix * Tongs * Large bowl * MK towel * Tortilla press * Parchment paper * Circle cookie cutter * Griddle * White Plate Step 2: Make Tacos Gobernador Ingredients Shrimp Filling: * 1 teaspoon canola oil * ½ lb raw shrimp, diced * 1 onion, diced * 2 tomatoes, diced * 1 green bell pepper, diced * 1 teaspoon salt * ¼ teaspoon pepper * ½ teaspoon smoked paprika * ½ cup tomato puree * 1 tablespoon minced cilantro * Finished Taco: * 1 flour tortilla * 1 stick butter * ¼ cup oaxaca cheese 1) Add oil to the pan. 2) Cook the shrimp, onion, tomato and pepper. Season. Add tomato puree and cook. Add the cilantro once the shrimp is nice and pink. Remove off the heat. 3) Once cooked, place butter on the comal. Add oaxaca cheese to the cooked tortillas. 4) Spoon on the shrimp mixture. 5) Press down and allow the tortilla to get crisped in the butter. Equipment * Large bowl * MK towel * Sautee pan * Silspat * Comal * Metal spatula Step 3: Make Langos & Assemble Ingredients * 1 ¼ teaspoons instant yeast * 1 teaspoon sugar * ¾ teaspoon salt * 2 cups AP flour * 1 tablespoon veg oil * 1 cup milk, warm * 2 cups canola oil, for frying * 1 garlic clove * ½ cup sour cream * 1 cup shredded white cheddar 1) Combine the yeast, sugar, salt, flour and veg oil in a stand mixer. Mix for 5 minutes. 2) Cover in a bowl and allow to rise in a warm place for 60 minutes. 3) Remove from the bowl and segment into 4 equal balls. 4) Roll out with a rolling pin. 5) Fry in oil one at a time until golden brown. 6) Rub with garlic clove. 7) Top with sour cream and shredded cheese. 8) Assemble! Layers: 1) Al pastor street taco 2) Shrimp taco gobernador (flour taco) 3) Langos (pronunciation: laang-guhs) with cheese and sour cream 4) Garlic naan with paneer tikka 5) Lavash (pronunciation) and Baba ghanouj 6) Roti and Curry chicken Equipment * Stand Mixer * Large Bowl * MK towel * Dough cutter * Dutch oven with canola oil * Small silspat
