Hi Guys!! Sharing one of my favorite ways to make and eat salmon! I love making Vietnamese spring rolls. They are super fresh and easy to eat. I’ve shown you guys a few different versions with different dipping sauces in the past and I have many more to come!! LOVE YOU GUYS! Here’s how I make everything~ Salmon: Brush with melted butter 2 cloves freshly minced garlic 2 chopped green onions 2 tbs fresh chopping parsley (I just throw these 3 items in a food processor) 1 tbs sesame oil Fresh squeeze lemon juice 1 Tbsp I used liquid aminos but you can use soy sauce 3 Tbsp oyster sauce 2 tsp sugar Pinch of salt and black pepper to season Massage everything in! Cover with parchment paper and bake at 375 for 10-15 mins. Remove and put under the broiler for 5-7 mins. Cooking times vary on the size of your salmon My mom likes making a scallion oil to brush on top and top with roasted crushed peanuts to the salmon. I don’t do this cuz I don’t like warm nuts (that’s what she said I know lol). I like doing mine with fried shallots 😋 “Mam nem” Pineapple anchovy dipping sauce Makes a huge batch and can be kept in the fridge 1 bottle of anchovy sauce 1 can of chunky pineapples with juice (fresh is good too) 1/2 cup of minced lemongrass 1 whole freshly minced garlic clove (I add lemongrass, garlic and pineapples in the food processor to make life easier) 4-6 tbs sugar (anchovy sauce is very salty so we need to balance the flavors out) 3-4 tbs of vinegar or fresh squeezed limes 3-4 tbs of garlic chili sauce Remember to taste and adjust to your liking! This is a strong pungent sauce that we use for a few types of spring rolls. If you don’t like pungent anchovy flavors a simple “Nuoc Mam Cham” is great with these!! “Nuoc Man Cham” 1 cup water 1/2 cup sugar 1/2 cup lime juice or vinegar (I use vinegar since I keep a big batch in the fridge) 1/4 cup fish sauce 2 Tbsp finely chopped garlic 2 finely chopped small red chilies or chili garlic paste Adjust seasonings to your taste! For the rolls you will need Vietnamese rice spring roll paper Vermicelli noodles Cucumbers Lettuce Any greens and herbs you like! My go to are: Mint Cilantro Basil Vietnamese perilla Lemon mint Asian flat chives
