ROAST CHICKEN MEAL PREP This is a delicious chicken meal prep with beautifully roasted fall vegetables, including pumpkin, green squash and sweet potatoes. Pumpkin is not only a great fall favorite, but it’s also a great low carb vegetable, so you should take advantage of it being in season! Be careful of your veggie intake when trying to lose weight. Vegetables have lots of carbs. And no worries, if you’ve never opened a pumpkin before, it’s easy! Adam will show you how! Meals can last in fridge 3-4 days. Put the ones you won t eat within that time in the freezer. 2. If frozen, take out the night before you plan to eat it and place in fridge.
