One of the fanciest foods you can serve at dinner is the exclusive white gold caviar. Harvested at a fish farm in Austria by a father-son duo, the caviar comes from a rare albino sturgeon. The process can take eight to ten years to complete—and the Gruell family are the only fish breeders in the world who know how. The preparation process is just as intricate: the roe is dehydrated, finely grated and mixed with dusting of 22-karat edible gold leaf to create a truly unique, luxurious and bespoke delicacy.
