Chop onions, celery, and carrots. Crush garlic cloves. Season ostrich wings with salt and pepper. 2) Heat oil in a large heavy-bottom skillet over medium-high heat and add ostrich wings. Sear for about 3 minutes add carrot, celery, onion, and garlic. Sautee with a wooden spoon for 5 minutes, until a bit of caramelization starts to form on the vegetables, then deglaze the pan with white wine. 3) Allow to boil for 2 minutes, then add chicken stock and ostrich wings. Cover the pot and throw in the oven for 4 hours. Remove from the braising liquid and let cool for half an hour. Equipment * Large Dutch oven * Knife * Cutting Board * Wooden spoon Step 2: Make the Sauce Ingredients * 2 sticks butter * 1 cup Louisiana hot sauce * ½ tsp paprika * ½ tsp chipotle powder * 2 tsp lemon pepper * 2 cloves garlic * 1 tsp lemon juice 1) Make clarified butter. Melt down butter in a pan over medium heat and stir for 5 minutes. When the butter foams and the solids separate from the liquids, pull from the heat and strain through a cheesecloth and a fine mesh strainer. 2) Pour half the butter into a bowl with hot sauce, paprika, and chipotle powder and whisk to combine. 3) Pour the other half of the butter into another bowl with garlic, lemon pepper, and lemon juice. Whisk to combine. Equipment * 2 Large mixing bowls * 1 square cheese cloth * Fine mesh strainer * Whisk Step 3: Fry and Coat Ingredients * 1 cup flour * 3 egg whites * 1 cup potato starch * 1 cup rice flour * 3 cups cold water * ¼ cup hot sauce * 2 tsp salt * 2 qts vegetable oil * Braised and cooled ostrich wings * 1 large bowl lemon pepper sauce * 1 large bowl buffalo sauce * Veggie sticks and blue cheese dressing for serving 1) Heat oil to 375 degrees. 2) In a large mixing bowl, whisk together egg whites, cold water, rice flour, potato starch, hot sauce, and salt. 3) In a second large mixing bowl, cover the ostrich wings in flour then shake off the excess. 4) Dip the wings in batter, allow the excess to drain off, then fry for 4 minutes, until golden brown and crispy. 5) Pull from the oil and drop two directly into the buffalo sauce, and 2 directly into the lemon pepper sauce and toss. 6) Plate with veggie sticks and blue cheese.
