Closed Captioning provided by Rev Time Codes: ------------------------- Clean / Braise - 1:53 Stir Fry - 6:12 Finish & Plate - 10:32 Recipe: ------------------------- Step 1: Clean/Braise the Octopus Ingredients * 1 Adult Octopus (4lb) * 1 Lemon * 8 Cloves Garlic * 2 Knubs Ginger * 1 Onion * 10g Mirin * Kosher Salt Equipment * 2 Big Bowls * 1 lg pot w/ lid 1) Clean inside of head. 2) Massage with salt to clean out suckers and tenderize. Rinse and repeat until clean. 3) Saute garlic and onion, then add everything else with the octopus. Cover with cold water and bring to a simmer. 4) Cover and braise until tender. Step 2: Stir Fry Ingredients * 15-20 baby octopus (frozen and cleaned) * Neutral Oil * 450g Rice Cakes * 30g Minced Garlic * 20g Minced Ginger * 1 Bunch Green Onion (save half for garnish) * 15g Toasted Sesame Oil * 20g Soy Sauce * 25g Sugar * 10g Gochugaru * 40g Gochujang * Toasted Sesame Seeds (for topping) 1) Blanch baby octopus for 10-12 seconds in boiling water. Drain and set aside. 2) Soak tteokbokki in hot water for 10 minutes, drain and set aside. 3) Combine all wet ingredients in a bowl. 4) Heat neutral oil in a large saute pan and toast aromatics. 5) Add rice cakes and 2/3 of sauce. When rice cakes are tender, add baby octopus. 6) In a separate bowl coat the big octopus with the remaining sauce. 7) Plate baby octopus/rice cakes, squidward on top and garnish with toasted sesame seeds and scallions. Equipment * Pot of boiling water * Spider * Med bowl (rice cakes) * Small pot of hot water * Large saute pan * Cutting board * Knife
