Sweet and Sour Chicken Char Siu Pork Fried Rice Hot and Sour Soup Sweet & Sour Chicken INGREDIENTS: 1 pound diced chicken breast 1 can of pineapple slices Sugar Vinegar Red food coloring Salt Corn Starch Baking Powder Egg Green bell pepper In a pot drain the pineapple juice from the can. Add in 2tbsp of sugar, 2 tbsps of vinegar a 2-3 drops of food coloring. Stir. Mix 2 tbsp cornstarch with 2 tbsp of water. Mix until milky and slowly add it into the pot. Stirring constantly until it reached your desired consistency. In a large bowl mix ¾ cup of cornstarch, ¼ tsp of baking powder and ½ tsp of salt. Add ½ a cup of water and mix until it is milky and thickens, making a batter. Mix an egg into the batter. In a frying pan heat canola oil. Dip your diced chicken into the batter and carefully place into hot oil. Fry until golden brown. When chicken is fresj out of the fryer sprinkle with salt. Dice a few pineapple slices and ½ of a green bell pepper. In a wok, heat your sweet and sour sauce and toss in your pineapple, bell pepper and chicken. Toss until everything is evenly coated and serve. Char Siu INGREDIENTS: ¼ cup rice wine ¼ cup soy sauce 1 tbsp honey 2-3 drops red food coloring 1 tbsp 5 spice powder 2 tbsp brown sugar 1 tbsp hoisin sauce ½ pound pork loin Over low heat, mix rice wine, soy sauce, honey, food coloring, 5 spice, brown sugar and hoisin sauce until sugar dissolves. Allow to cool. Slice your pork in half and place in a ziplock bag. Add the marinade and allow to sit for about 2 hours. *** Optional step: Wash off 2 tbsps wood chips and place over a piece of foil and place in a pan. Place a wire rack over the wood chips and place pork on the rack. Cover porn with more foil and heat the pan. Once it begins to smoke let it sit for about 5 minutes. Remove. Heat your oven to 350 degrees Fahrenheit and cook for about 10-15 minutes. Broil for an additional 4-6 minutes for some color. Pork Fried Rice INGREDIENTS: Diced Char Siu ½ cup diced carrots ½ cup diced onions 1 tsp ginger 3-4 minced garlic cloves ¼ cup scallions 1 tsp oyster sauce 3 tbsp soy sauce Sesame oil 1.5 cups cold cooked rice Canola oil 2 eggs Heat 1 tbsp sesame oil and 1 tsp canola oil in a wok. Add your carrots and onions. Stir and allow to cook for 3-4 minutes. Add in scallion. Stir and allow to cook down. Mix in your ginger and garlic. Push all the ingredients int the wok to one side. Add in another splash of canola oil. Crack in 2 eggs into wok, scramble and mix together with vegetables. Add in your char siu and toss. Mix in your cold rice and add in your soy sauce and oyster sauce. Toss and serve! Hot & Sour Soup INGREDIENTS: 1 pound pork loin 1 cup shitake mushrooms ½ cup diced tofu ½ cup bamboo shoots Chinese cooking wine Sesame oil 2 tbsp Soy Sauce 1 tbsp rice vinegar 3 tbsp sugar 1 tbsp Sriracha – or to taste 2 tbsp cornstarch 1 beaten egg In a large bowl, mix cornstarch, soy sauce, a splash of cooking wine, rice vinegar, sugar and sriracha and mix. Set aside. In a wok heat 1 tsp sesame oil Add in mushrooms. Cook until they begin to develop some color. Add in 1 tbsp. of canola oil to wok and toss in your pork. Cook until it develops some color. Add bamboo shoots. Stir. s Add in tofu w/ 2 cups of water or stock and stir. Add in your cornstarch mixture that we made in the beginning and let it come to a boil. Stir in your scallions.
