Equipment * Spice grinder * 2 small tasting spoons * 1 bag Nacho Cheese Doritos * 1 bag cool ranch Doritos Step 2: Curing the Salmon Ingredients: * 2x 1lb filets of skin-on wild Alaskan salmon * 1 bowl Nacho Cheese curing mixture * 1 bowl Cool Ranch curing mixture 1) Rub each salmon filet down in each curing mixture, wrap in plastic, poke holes in the bottom of each plastic wrap, then set on a sheet pan with baking rack on top and let sit in the fridge for at least 3 days. Equipment * 1 sheet pan * 1 baking rack * Roll of plastic wrap * Needle to poke Step 3: Rinsing, Slicing, and Eating the Salmon Ingredients: * 2x Dorito-cured salmon filets * 2x bowls Dorito seasonings * Sliced and toasted bagels * Cream cheese * Capers * Red Onion * Tomato 1) Unwrap each salmon filet, rinse off in water, dry on paper towels, add additional seasoning powder on top. 2) Slice the filets to expert thinness (or, y’know, do the best you can) and add on top of a bagel dressed to your desire.
