CASABE FARM ADDRESS: Holguín, Cuba 🇨🇺 CASABE: Peel and mash the yuca (cassava). Place in a bag and press until it’s dried and turns into a powder. Pour the yuca powder into a small circular shaped casabe mold on the grill - cook on one side for about 15 seconds. Eat with ingredients inside (like a tortilla) - - - - - - - - - - - - - - - - - 2. EL ESCAPAO (Holguin) ADDRESS: Holguín, Cuba 🇨🇺CASEBE (with pork): Slice pork sausage and place on the casabe, topping it with lettuce and tomato. Drizzle lime on top and eat. - - - - - - - - - - - - - - - - - 4. CRIADERO DE COCODRILOS ADDRESS: Cienaga de Zappata, Cuba The facility has been open for 59 years and breeds Cuban crocodiles. There are currently 4,500 crocodiles in the preservation farm. - - - - - - - - - - - - - - - - - 4. ALEXIS’ ADDRESS: Cienaga de Zappata, Cuba 🐊 PUNTA: Fillet the crocodile tail. Slice the tail meat into thick chunks. Drizzle olive oil on the grill. Season with salt and pepper and place on the grill. Grill for a bit. Add garlic and olive oil on top. Add onions, green pepper and red pepper and continue grilling. Drizzle with more olive oil. 🐊 CROCODILE TAIL FILLET: Take part of the tail and slice very thin (like a butterfly cut). Pour olive oil on the grill and grill fillets. Drizzle with olive oil and continue flipping sides to fully cook. Add olive oil and garlic mixture and black pepper. Cook until ready and then add onions on top. 🐊 ENCHILADO: Filet and chop crocodile neck and inner thigh. In a pan, add tomato sauce, olive oil, red chili pepper and stir. Continue stirring while adding more olive oil, salt and then the crocodile meat. Add black pepper and allow to simmer. When almost ready, add onions and green pepper. Allow it to cook for 5 more minutes with the lid on.
