Rub salt all over the turkey’s skin and inside the cavity. Stuff the turkey cavity with half of the ginger, garlic, scallions, and oranges. 2) Add the rest of your aromatics and the water to the bottom of a large turkey roasting pan, place the turkey on top of a rack, cover it with foil, and steam for 3 hours. 3) Remove the turkey, take the aromatics out of it, and allow it to rest and come to room temperature for about 2 hours. Equipment * Turkey pan * Roasting rack * Cutting board * Knife Step 2: Make the sauce Ingredients * 3 Tbsp vegetable oil * 2 cup honey * Zest and juice of 4 oranges * Juice of 1 lemon * 2 cup seasoned rice wine vinegar * ½ cup soy sauce * ¼ cup sriracha * 4 Tbsp minced ginger * 8 minced cloves garlic * 2 Tbsp sesame oil * 6 Tbsp water * 4 Tbsp cornstarch 1) Heat vegetable oil in a large sauce pot on medium heat. Add in ginger and garlic and sweat until translucent, about 3 minutes. 2) Add in all the rest of your ingredients, except for the cornstarch and water, and cook on high heat for about 10 minutes. 3) Whisk together cornstarch and water, then add it to the sauce and stir, continuing to cook for another 2 minutes until thick and syrupy. Reserve for later. Equipment * Large saucepan * Whisk * Silspat * Microplane * Cutting board Step 3: Fry the Turkey Ingredients * Steamed turkey * 2 cups flour * 2 cups corn starch * 1 quart cold water * 1 tsp baking soda * 2 tsp salt * 1 tsp white pepper 1) Have your turkey fryer heated to 350 degrees. Mix together batter in a large paint bucket with a paint mixer. Dry the turkey off with paper towels, then attach to the deep frying hook and submerge in batter. Lift the turkey to allow excess batter to drain off the bird. 2) VERY CAREFULLY lower the turkey into the deep fryer, and allow to cook for 10 minutes, until the batter is golden brown. 3) Remove the turkey, and let rest in a roasting pan for 5 minutes. Paint the bird with orange sauce, then throw back in the oen for 10 minutes, just to let that sauce bake into the skin. Garnish with scallions. Equipment * Turkey fryer * Paint bucket * Paint mixer Step 4: Garnish Ingredients * 1 bowl Orange sauce * Large bed of chow mein for serving * Scallions for garnish 1) Paint the turkey with orange sauce then throw it back in the oven for about 10 minutes, just to tighten up the sauce. Serve it on a bed with chow mein and garnish with scallions. Equipment * Pastry brush * Large serving platter * Baking sheet
