Equipment Large Bowl Medium Bowl Whisk Oil Plastic wrap Step 2: Five-Alarm Chili Ingredients 2 Tbsp vegetable oil 1 package Kroger Brand Shaved Steak 1 Tbsp New Mexico chile powder 1 Tbsp chipotle chili powder 1 Tbsp habanero chili powder 1 tsp granulated garlic 2 tsp salt ¼ tsp black pepper ¼ tsp white pepper ½ tsp dried oregano ½ diced onion 1 Tbsp minced garlic 1 diced jalapeno 2 Tbsp tomato paste 1 quart chicken stock 1 bay leaf 2 tsp cornstarch 3 tsp water 1) Season Kroger Brand Shaved Steak with salt, pepper, oregano, cocoa powder, all three chile powders, and cumin. 2) Heat oil in a stock pot over medium-high heat until shimmering and moving freely about the pan. Add in Kroger Brand Shaved Steak and allow to sear for 5 minutes until deeply browned before moving. 3) Add in onion, jalapeno, and garlic, then stir with a wooden spoon and continue to sautee for another 5 minutes, until vegetables are translucent. 4)Add in tomato paste, stock, vinegar, and bay leaf then bring to a boil. 5) Lower the heat to medium low and allow to simmer for at least an hour, or up to 3. You may have to add more water if you continue to simmer longer. 6) When the Kroger Brand Shaved Steak is sufficiently tender, whisk together cornstarch and water and stir the slurry into your chili. Cook for an additional 5 minutes then turn off the heat and reserve for later. Equipment Stock Pot Wooden Spoon Small bowl Whisk Step 3: Frying and Finishing Ingredients 1 frozen Tater Bite dome 2 quarts vegetable oil 1 portion five-alarm chili 1 cup shredded cheddar cheese ½ cup sour cream ¼ cup sliced scallions Additional Tater Bites for garnish 1) Heat a deep fryer to 350 degrees. 2) Use a spoon or offset spatula to gently remove the frozen Tater Bites from the domed bowl being careful not to break off any taters. 3) Gently lower the tater dome into the oil, pressing the center down so it fills with oil, and fry for 5 minutes, until golden brown. 4) Remove from the oil—you’ll need to gently turn the bowl over to allow the oil to drain—and allow to rest on a bed of paper towels. 5) Fry your additional garnish tater bites in the oil for 5 minutes, until golden brown and allow to drain on paper towels as well. 6) Fill your tater bowl with chili and garnish with cheddar cheese, scallions, sour cream, and additional Tater Bites. 7) Add hot sauce if you want. You won’t need it. Equipment Offset Spatula Ladle
