IDK about you, but I love casseroles! 🍳 Today I’m making a Huevos Rancheros Breakfast Casserole 🔥 No matter what time you decide to eat it- this casserole is a huge hit! 👏🏽 Plus, I made this one with almond flour tortillas so it’s GF, and I used Dairy Free cheese so it’s good for anyone! Recipe below: 👇🏽 Ingredients 6 almond flour tortillas 8 eggs 1/2 yellow onion 2 cloves minced garlic 1 jalapeño 1 avocado 1 can pinto beans 1 can crushed red tomatoes 2 cups shredded cheese cilantro or parsley for garnish 1 tsp salt 1 tsp pepper 1 tsp cumin 1 tsp chili powder Directions Preheat your oven to 400°. In a medium size skillet, saute the onion, garlic, jalapeños and seasoning in olive oil. Add in the can of crushed tomatoes and bring to a simmer. Remove from the heat. Place 3 tortillas on the bottom of a skillet and then add in half of the tomato mixture, cheese, beans, and then another layer of tortillas, the rest of the tomato sauce and then top with cheese. Use a spoon to create a small area around the casserole to place the eggs in. Next, crack the eggs and place them on top of the casserole. Place in the oven for 30 minutes or until the egg whites have cooked all the way. Remove from the oven and let cool. Distribute into your meal prep containers and top with an avocado slice and the parsley
