I teach my little brother Kevin how to shoot guns. He has never shot a 270 riffle before, or shotgun, or 22 LR, 20 shot gun. My Gear (Shop and Support): https://www.thewoodedbeardsman.com/ I ll show you a bit on how to shoot a gun including the types of ammunition. Kevin will shoot the 22 long rifle first and then try the 20 and 12 gauge shotguns. I picked up a new Hell s Canyon Browning 270 for big game such as deer, coyote and even moose. The 22 LR is for small game such as squirrel, raccoon and hare. The 20 is a 870 Remington express, a rather cheap gun, but it comes with a rifled barrel for shooting slugs. It will shoot both shot and slugs making it an all around gun. As a 20 gauge, it shoots less shot, but can be good on ducks and geese, turkey at close range. The 12 gauge Browning shoots bigger stuff so it more effective at long range. Bacon and eggs are served and more bass are caught as we settle into a normal day of summer camping. There s a little bit of everything including swimming, food preservation, water purification tips, wild edible identification, fish cleaning, and cooking more fresh fish over the fire. Regarding the fish: We had a long discussion about this fish in another video that I used the clip in and if you look close enough, the fish s brain was scrambled by my knife before I skinned it which I did after hitting it over the head. We first catch a porcupine, then we prepare it for cooking by removing the quills and scorching the rest over an open fire. After that we dig up the dirt to make a primitive hangi which is filled in with white hot rocks and coals. The next morning we exhume the porcupine for eating and prepare some corn meal bread made from low grade field or cow corn that is parched then ground in a primitive wooden mortar and pestle. To this we add blueberries, fresh collected raspberries, and a couple of eggs. This is then cooked in a dutch oven on the fire. In order to protect his dog, Adam takes the porcupine. It is well known that porcupine and dogs don t mix where porcupine will put quills into the muzzle of the dog which is very painful. Porcupine are very plentiful up North and sadly, because they have so little food, they often end up dead by the side of the road as they try to find new trees to eat. Reducing their numbers means that fewer will end up wasted on the road. They also make great table fair and are eaten around the world! In this epic episode Jeremy and I prepare a porcupine in a very traditional way. Learn how to pluck, singe and scrape off the quills and hair. We then examine how to cook using a primitive earth oven by covering it with white hot hot rocks and coals and cover overnight with dirt to steam and bake. This entire series is about catch n cook! Watch and find out how well it cooked and whether this traditional famine food is palatable. We discuss porcupine as a "survival food" and how it was traditionally used. Also on the menu is crushed cow corn in a traditional mortar and pestle combined with egg and fresh strawberries and blueberries with farmed raised pork fat, cooked over fire as a corn meal. In this video I collect and turn wild leek, or ramps into pesto and pickle for long term storage. I also discuss identification, collection practises and conservation, locations in which to find them, seasonality, preparation and use. Wild Leeks Pickling Instructions - To pickle only use the white part of the leek. Wash well. - Make a brine solution including white wine vinegar, honey, kosher salt, chile pepper if desired, mustard seed, coriander seed and black pepper corns. - Bring brine to boil and let simmer for 5 minutes. - Fill a canning jar tightly leaving as little space as possible. It is not necessary to sterilize the jars at this point. Filling the jars tight will help reduce the chances that the bulbs will float to the surface rather than be completely pickled in the solution. - Allow 1/2 inch of headspace to ensure that they are fully covered by the brine. - Seal the jars with the lids. - Place the jars in a water bath and bring the water to boil. Let boil for 10 minutes to ensure that they are properly sterilized. - Wait at least a week for the flavours to permeate the leeks, however, waiting a month or more will produce a better overall flavour. - If the water bath is skipped, the leeks will keep for up to 3 months in the refrigerator. If they are sterilized, they will last up to a year unopened. Wild Leeks Pickling Ingredients - 1 Pound ramps (Allium tricoccum) - 1 cup water - 1 1/4 cups white wine vinegar or apple vinegar - 2 tablespoons honey - 1 tablespoon kosher or other non-iodized salts - 1 small hot chile pepper chopped or crushed (you can use fresh or dried) - 1/2 teaspoon whole mustard seeds - 1/2 teaspoon whole coriander seeds - 1/4 teaspoon whole cumin seeds - 6 to 8 whole black peppercorns Wild Leek Pesto Instructions - To make wild leek pesto blend leaves, olive oil, cashews or sunflower seeds, and salt. - I would recommend that the sunflower seeds be blended first, before adding the other ingredients to ensure they blend well, but if you have a powerful blender you may find that this is not necessary. - Blend until smooth. - Serve on toast, sandwiches, or pasta. Wild Leek Pesto Ingredients - 2 cups packed wild leek leaves - ¼ cup olive oil - ½ cup cashews or sunflower seeds - sea salt to taste Information on Wild Leeks or Ramps Wild Leeks - Wild leeks, ramps, or wild onions, are well known. - In fact, covering them might feel redundant, yet they are so easy to collect and use, ignoring this valuable wild edible resource is ill fitting on a channel that focuses on living off the land. - Few wild foods come ready to consume like leeks. - In this video, I share collection and preservation of the wild leek through pickling. I also present two ways to prepare the leek through a pesto and simply sauteing. - If nothing else, you will enjoy a late spring afternoon outdoors with my son and I. - Wild leeks form clumps. The underground bulbs pack tightly together, often being attached to one another. - Each plant has 2 or 3 leaves about 8-12 inches long. They look very much like the leaves of lilies. - Ramp bulbs are white and teardrop shaped. Their smell is unmistakably garlic and onion-like. - Leeks can be found from Northern Minnesota across Southern Ontario to Nova Scotia and New Brunswick south to the Appalachians to Tennessee and Georgia and west to Missouri and Iowa. - Leeks prefer moist, rich soil that is typical of hardwoods such as sugar maple, beech, basswood, yellow birch and elm. - Leeks appear in spring and begin to die back in early summer soon after they have been shaded out by taller trees. - Not only are the bulbs edible, but so too are the leaves, so please don t discard them or let them go to waste. Use the whole plant. - Harvest leeks as the leaves attain about 2/3 their full size, which happens mid-spring. If you harvest too early, you will find that the bulbs have not reached their potential. However, leeks are good to harvest anytime the leaves are still green. - By recognising the seed head, it is possible to harvest leeks in the off-season of the summer and fall. At this time, the bulbs will still be holding all the plants as it prepares for next spring. - Be very careful when harvesting leeks as they are susceptible to over harvest. Avoid clearing out full patches, instead select a few bulbs from a bunch of different clumps. This will allow the founder plant to continue to spread out in all directions. - Where possible, clean leeks in a stream or lake as this will reduce your footprint and keep waste and soil where it belongs. - Remove the outer thin sheath covering the bulb. The result is a clean, white, bulb that is ready for consumption. - Leaks can be used in a variety of ways including raw in salads, or sandwiches or as a cooked addition to any dish calling for onion or garlic. - Leaks can also be dried after being thinly sliced, blanched and frozen, or pressure canned.

If it s legal, it s fair use. Sometime we even do some bushcraft, but the main focus is really on eating wild foods, wild edibles and catching and cooking various foods. This isn t about just surviving, this is about thriving! Season 4: Northern Autumn, takes place in Northern Ontario with vast opens seasons including fish, catfish, pike, trout, birds such as grouse, duck, and geese, bear, deer, and moose. Also wild apples, mushrooms, berries, and so much more. We make use of all the resources in this challenge to meet the demands for calories imposed by the human body! In this episode we pursue ruffed grouse in the far North of Ontario in hopes of escaping high pressure areas. We set up camp and dig into our wild foods including beaver and bear while supplementing with smaller items such as birds and mushrooms. Beaver are surprisingly easy to trap and offer a ton of nutrients to the forager. A real staple item! Beaver is also great eating, usually very full of fats crucial to surviving long term in the wild. Having the advantage of a packed snowmobile trail is a huge advantage freeing us from using snowshoes. But even then, we d still need to produce at least 3 rabbit each per day to meet our minimum caloric requirement. This assumes that there are 47 calories in an ounce of lean meat, and that a rabbit is 16 ounces total. This produces 752 calories per rabbit. If you didn t eat the brain and organs, instead of 3 rabbits the total bumps up to 4. No doubt, this might be possible to accomplish on a great, or even just a good day, but repeating it in succession day-after-day for a week, month, or year, is unlikely. This not withstanding, eating just lean meat, will wreak havoc on the human body and it s digestive system. As we found on The Wilderness Living Challenge, so called "rabbit starvation," or the act of eating nothing but lean meat, with no, or very little fat, is something the body quickly rejects. Despite this, we know that the Inuit or Eskimo, of the far North, and explorers to the region, habitually subsist on mostly meats. So how is this possible? In a year long study published in 1930 in the Journal of the American Medical Association, it was found that a diet of just meat was possible, with one important caveat. That type of diet should be high in fat, rather than just lean meat. In this particular study, the two male subjects ate beef, lamb, veal, pork and chicken consisting of muscle, liver, kidney, brain, bone marrow, bacon, and fat. In other words, they ate the whole animal. This is something modern man is not accustomed, preferring to substitute these organs and marrow for more palatable alternatives like nut and vegetable oil or more preferred fats from pig and cow. But refined fats from nuts or vegetables require massive harvesting and processing, something prehistoric man was not able to utilize. The men in the experiment ate 800 grams of meat per day in 3-4 meals. The protein ranged from 100 to 140 grams, the fat from 200 to 300 grams, and carbohydrates from 7 to 12 grams. Translated into calories, the totals amount to 1-2% carbohydrate, 15-25% protein, and a whopping 75-85% fat. The carbohydrates came from only the glycogen in the meat. Both men were reported to be in good health after a year and only lost a few pounds of body weight. There was however, a significant initial change in body weight due to a so called "shift in water content of the body." This was caused by the body dumping water as it went into ketosis. Their diet only became an issue when the amount of fat they consumed dropped below 55%. By adding more fat, the problem disappeared. During the course of the study blood pressure and vitamin concentrations all remained normal. So while nothing but meat is possible for subsistence, it s not enough just to get lean meat such as rabbit. Even if you could track down sufficient calories from meat, that would need to be balanced with ample fat. That s just a friendly reminder that as always, in nature, there is no free lunch.
