RALF S ICE-CREAM LAB 🍦FISH SAUCE ICE-CREAM: Pour cane sugar, dextrose sugar, skim milk powder, inulin and gelatine powder in a container, mix and put aside. Mix together fish sauce, heavy whipping cream and UHT milk. Slowly add both mixtures in the Micronizer Blender. Place the mixture in the fridge for at least 12 hours. Later, take it out and pour it into the Petch Freezer for 5 minutes to pasteurize the liquid. Turn the machine to freezing mode (-8ºC). Last, put the ice-cream in a container and place in the fridge (-36ºC) for at least 30 minutes. 🍦PHO ICE-CREAM: Pour sugar, dry glucose, inulin and soberto in a container and put aside. Pho liquid: Add pho, broth, herbs, chilli sauce and hoisin sauce in a bowl. Filter the pho broth into a separated container and add mineral water. After that, mix in the pho noodles. Slowly add both mixtures in the Micronizer Blender.Place the mixture in the fridge for 12 hours. Later, take it out and pour it into the Petch Freezer.
