I was fortunate to meet up with Clint of Zold Outdoors as he passed through my neck of the woods on his way to Temgami. We decided to put together a wild foods menu to feature foods available in spring (see below) This entire series is about catch n cook! We managed to collect a variety of wild foods including wild leeks or ramps (wild onion), burdock and thistle root, stinging nettle, and brook trout to staple together with some splake I caught ice fishing earlier in the year as well as some maple syrup. We also feature a Native American strawberry corn bread (or cake) topped with sunflower seed nut butter. We wash it all down with wild lemon balm tea sweetened with natural maple sugar. Puree walnut, peanut, almond, or sunflower (or combination) for about 15 minutes in a blender. Do NOT add any water based products like maple syrup, this will keep the oils separate and it will not make a butter. Blend until it is smooth and creamy. This may be done by mortar and pestle, but will be labour intensive. Once completely blended and the nuts and oil have separated to make a paste add in some maple syrup or honey, but not too much, or keep plain. Nut butter may be flavoured with mint, dillweed, juniper, mustard seed, clover blossoms or bee pollen. Some of these are ideal over fish. Serve over corn meal bread, vegetables or fresh fruit. Keep refrigerated. Wild Strawberry Bread 1 cup fine cornmeal (I used 2 to make up for no wheat flour) 1 cup flour (not used) 1 cup nut milk (used nut butter and added extra water) 2 tablespoons nut oil (not used) 1 egg (I used 2 eggs to help bind since no wheat flour was used) 1/2 cut finely cut fresh strawberry leaves (not used) 1 teaspoon coltsfoot ashes (not used) 1 cup freshly picked wild strawberries (I used store bought since they were not in season). Mix all ingredients. Place strawberries in center as I did (end of video), or "fold them in." You can bake this at 425F for 40 minutes in a buttered or greased dish or fry them like a pan cake. Serve with nut butter, sunflower, black walnut, peanut, etc. Add some chokecherry or pincherry jam, maple syrup, or other sweat toppings to turn it into a nice dessert.
