SUGARCANE FARM đšđș SUGARCANE JUICE: Chop the sugar cane and peel it with a machete. Clean the trapiche machine. Insert the sugar cane into the trapiche to smash and extract the juice. Filter the sugar cane juice and serve. - - - - - - - - - - - - - - - - - 2. CACAO FARM đšđșCACAO SAUCE: Peel and chop onions and mix in tomatoes, jalapeños and oregano. Add all to a hot pot and stir. Add water, cacao powder and salt. Add cacao sauce and stir. - - - - - - - - - - - - - - - - - 3. EL GĂIRITO COMMUNITY đšđșChochirone de Baracoa: In a pot, boil a combination of coconut, water, guava, papaya and sugar for around 4 hours. After cooking, remove it from the fire and let it cool for about an hour. Create a cone, made of palm leaf, and stuff it with the Chochirone. đšđș PASCAL DE FRITO (Grilled Golden Fish): Sauce: In a pot, add coconut milk, achiote, chili, cilantro, garlic, onion, shaved malanga (taro) and oregano. Mix everything and then boil for 15-20 min. After boiling, add vinegar oil, water, salt and chicken flavoring. Grill the golden fish. Put onion on the fish then pour the sauce on top. đšđșCRAB BACAN: Grate coconut, add shaved cambute (banana) and some shaved banana with achiote and mix. Add sauce (mixture of cilantro, garlic, chili, oregano and crab) and continue mixing. Pour some of this mixture into a banana leaf, wrapping it almost like a tamale, and boil for 30 minutes. đšđșMAPEN DE FRITO (Fried breadfruit): Slice breadfruit into chips. Fry until crispy đšđș CUBAN LECHON: Season pig and stuff with rice and vegetables. Skewer pig and roast over fire for 6-8 hours, rotating continuously. đšđș MORCILLA: In a bowl, mix the pig blood, add oregano, cilantro, garlic and salt together. Stuff the intestines with the pig blood mixture.
