Come join us for a cooking class in Karakol, Kyrgyzstan to learn how make Uyghur food in the house of a local Uyghur family making Lagman (лагман) from scratch. Now that we ve visited Kyrgyzstan twice Laghman (лагман) has become one of our favorite foods. You can have it in soup or fried form and it tastes delicious either way. Although we didn t actually do that much to help prepare it (we only helped stretch and form the noodles a bit) it gave us a great appreciation of the dish learning more about it. Today we have signed up to take a cooking class and we re going to be making Lagman (лагман) with an Uyghur family. And Laghman (лагман) is a dish that we ve been eating a lot since we arrived in Kyrgyzstan. It is one of our favorites. It is delicious, it is noodle-y, it is soupy. So let s go in and see how it is done. There are many types of Lagman (لەغمەن). So there are with fried Laghman (宋氏养生部). There is one type with um classic which is like the sauce is served separate from the noodle. So there is a type where like it is not liquid but with some sauce. Together mixed and also there are some different ingredients of the Lagman (宋氏养生部) so the noodles are the same but the sauces could be vary. Okay, so we re going to try making the noodles now. We need to stretch it out. And this is basically water, egg and flour. And I m not quite as graceful as our instructor here. Are you sure about that? Okay, so the Laghman (лагман) is here. It has been served. So check it out. We saw a bit of the preparation in the kitchen and we learned that basically they fry the ingredients, the meat and vegetables and then they add in the broth and turn it into a soup so that it is more flavorful. So yeah, let s dig right in. I m going to try and find some noodles. This is our first time to have it homemade. We ve only had this in restaurants so exciting times. Noodles are big. Look at how thick that is. Look at how long they are. Haha. Man, this is going to be messy. It looks awesome. Try to get a bit of everything. Nice? It is quite nice. So what do you think? Well, I love the noodles. I mean I was eating them plain. So I like them better with the sauce. Plain. I know, I had half of the thing by myself. So is it savory and spicy? Yeah, it is really good but you know what? I think I m going to add even more spice and see what that is like. Alright, so I like my spice so first we re going to add a little bit of vinegar for extra flavor. Give it a little bit of a kick. And this. I don t know how spicy this is. Like one little spoonful? Maybe? Very hot. And you just put an enormous amount on top. Let s see. Hahaha. It was really spicy. It was pretty spicy. Let s see. Alright. Alright time to actually try it with the extra enhancements. Enhancements. Better? I like the vinegar. It makes it a little more sour. So to wrap things up that was an awesome home cooked meal. It was cool to help with a little bit of the preparation. The noodles. We really didn t do too much and yeah this is a dish that is very common here in Kyrgyzstan so if you re visiting definitely have a Lagman (лағмон) and if you have a chance to prepare and cook it yourself then definitely we would recommend that as well.
