Watch Sara Lynn’s Video Here: http://bit.ly/2bDUhM4 SUBSCRIBE to The Domestic Geek Here: http://bit.ly/1dn24vP SUBSCRIBE to Mind Over Munch: http://bit.ly/MindOverMunch RECIPES FROM THIS VIDEO Mushroom & Spinach Risotto ¼ cup Arborio rice 1 cup vegetable broth 1 tbsp butter ¼ tsp minced garlic ¼ cup mushrooms, sliced ½ cup spinach, chopped ½ tsp fresh thyme leaves 1 tsp parmesan cheese, freshly grated In a large wide-bottom mug (a cappuccino mug works well), combine the rice, broth, butter and garlic. Place the mug in the microwave and cover it tightly with a plate. Cook the rice on 50% power for 8 minutes. After 8 minutes, stir in the mushrooms, spinach and thyme. Cover and cook for an additional 2 minutes. Once the cooking is complete, let the mug rest in the microwave for another 4-5 minutes. Top with parmesan cheese and enjoy!! Lasagna Soup ¼ cup mini pasta shells 4 frozen cooked meatballs, chopped 1½ cups vegetable or chicken broth 2 tbsp marinara sauce ¼ tsp minced garlic ½ cup spinach, chopped 2 tbsp ricotta cheese 1 tsp parmesan cheese, freshly grated In a large mug combine pasta, meatballs, broth and marinara sauce. Stir well. Cook on 70% powder for 6 minutes. Stir in your spinach and let the soup sit for 3-4 minutes or until the spinach is completely wilted. Top with ricotta and parmesan cheese. Berry ‘Baked’ Oatmeal 1 mashed banana ¼ cup oats ¼ cup milk 2 tbsp liquid eggs ¼ tsp vanilla extract 1 tbsp maple syrup ¼ tsp baking powder ½ cup mixed berries Combine all of the ingredients in a large mug. Microwave on full power for 3-4 minutes or until the oatmeal is set. Top with vanilla yogurt and more berries. Enjoy! If you liked this video, check out my other collabs with Sara Lynn!
