Blend until mixture begins to become smooth. While blending, slowly add olive oil until dip has reached the desired consistency. Serve with crostini or fresh vegetables. Enjoy! Deconstructed Nicoise Salad For the salad: 6 eggs, boiled, peeled and chopped 2 cans sustainable tuna, flaked 1lb cherry tomatoes, halved 1lb green beans, trimmed and steamed 3-4 white potatoes, chopped and steamed 1 cup olives For the dressing: ¼ cup olive oil 3 tbsp white wine vinegar 1 clove garlic, minced 1 tsp grainy Dijon mustard salt and pepper Arrange salad ingredients in rows on a large platter. In a small bowl whisk olive oil, white wine vinegar, garlic, Dijon mustard, salt and pepper. Dress and toss the salad at the table just before serving. Enjoy! Fresh Berry Pavlova https://thedomesticgeek.com/fresh-berry-pavlova/ For the pavlova: 4 egg whites 1 cup superfine sugar 1 tbsp cornstarch ½ tsp pure vanilla extract For the whipped cream: 1 cup heavy cream 3 tbsp powdered sugar 2-3 cups fresh berries Preheat oven to 275°F. Line a baking sheet with parchment paper and use a pencil to trace an 8inch circle. Flip paper over the pencil mark is on the bottom. Set aside. In a stand mixer or with an electric beater beat egg whites until they become frothy, about 1 minute. Slowly add sugar while still mixing. Beat egg whites and sugar mixture until it’s white and glossy and forms stiff peaks, about 5 minutes. Add cornstarch and vanilla extract and beat for 1 additional minute. Pour meringue mixture onto the parchment lined baking sheet and use a spatula to form a circle. Create a dip in the centre so you have a place to put your filling. Bake for approximately 1 hour. Turn off the oven and allow your meringue to cool in the oven for 30 minutes before removing it. The meringue may crack when it hits cool air. For the whipped cream, beat cream and powdered sugar until they form stiff peaks, about 2 minutes. When the meringue has cooled completely, spoon whipped cream into the centre and top with fresh berries.
