Lightly grease a loaf pan with oil and set it aside. In a large bowl whisk flour, baking soda and salt together. Set aside. With a stand mixer or hand mixer beat butter and sugar until they become light and fluffy. Add eggs and vanilla extract and beat until combined. Add half of the coconut milk and half of the dry ingredients. Beat until combined. Add the other half of the ingredients and beat until combined. Fold in shredded coconut and blueberries. Pour the batter into the loaf pan. Bake at 350°F for 60-70 minutes or until the loaf is completely set. If the top begins to brown too quickly, tent it with some aluminum foil. Allow the loaf to cool completely. In a small bowl whisk powdered sugar and coconut milk until it forms a glaze. Pour the glaze over the loaf. Pulse until finely minced. add red wine vinegar, olive oil, salt and pepper. Pulse until well combined. Store in the refrigerator for up to 5 days. For the Flank Steak 2lbs flank steak olive oil salt and pepper On a foil-lined baking sheet drizzle flank steak with olive oil and season with salt and pepper. Turn broiler to high. Once heated, place steak under broiler and broil for about 3 minutes per side for medium rare. Add 1 minute per side for medium. Remove from heat and allow to rest for 5 minutes. Using a very sharp knife slice the beef as thinly as possible, cutting against the grain. Serve immediately or store in the refrigerator for up to 3 days. Beef can be added to pasta, salads, fajitas or eaten on its own. Strawberry Basil Quinoa 1 cup quinoa 2 cups water 2 tbsp olive oil 2 tbsp balsamic vinegar 1 tbsp honey 1 cup strawberries, quartered 3 -5 basil leaves, finely chopped 1/4 cup sunflower seeds 1/2 cup goat cheese Cook dried quinoa according to package directions and allow it to cool. In a small bowl, whisk together olive oil, balsamic vinegar, honey, basil and salt and pepper to taste. In a large bowl combine quinoa, strawberries, basil and sunflower seeds. Toss with salad dressing. Finish with crumbled goat cheese. Serve immediately or store in the fridge for 3-4 days. Green Beans with Slivered Almonds 1lb green beans 1/4 cup slivered almonds 1 tbsp white wine vinegar 1 tbsp olive oil 1 tsp Dijon mustard salt and pepper In a small bowl whisk olive oil, vinegar, Dijon mustard, salt and pepper. In a steamer basket steam green beans until tender, 3-5 minutes. immediately rinse beans under cold water to stop the cooking. Toss cold beans in dressing and top with slivered almonds.Serve immediately or store in the fridge for up to 4 days. Herbed Pea Soup 2 tbsp butter 3 leeks, rinsed & finely chopped 2 garlic cloves, minced 6 cups vegetable broth 5 cups frozen peas 1 tbsp fresh tarragon, roughly chopped 1/4 cup mint, roughly chopped 1/4 cup chives, finely sliced salt and pepper yogurt for serving In a large pot over medium-low heat, melt butter and cook leeks until softened, approximately 6-7 minutes. Add garlic and cook for an additional minute. Add broth and simmer leeks for 5-10 minutes. Add peas and cook for 3 minutes, or just until peas have heated and cooked through. Remove soup from heat and season with fresh herbs and salt and pepper. Puree with an immersion blender. Serve immediately with a dollop of yogurt or store in the fridge for up to 4 days. This soup is great served hot or chilled. Sunny Corn Fritters 3 eggs 1 cup cheddar cheese, grated 2 cups corn, fresh or frozen 2 tbsp cornmeal 1/2 jalapeño, seeded and minced 2 green onions, finely sliced salt and pepper olive oil In a medium bowl whisk eggs. Add corn, cornmeal, Cheddar cheese, jalapeños, green onions, salt and pepper. Heat olive oil in a large skillet. Spoon dollops of corn mixture into the pan. Cook until golden and flip, approximately 3 minutes per side. Once cooked, transfer to a plate lined with paper towel. Repeat process with remaining corn mixture. Serve immediately or store in the fridge for up to 4 days. Fresh Salmon Salad 1 8oz salmon fillet, cooked & flaked 1 celery rib, finely diced ½ English cucumber, seeded & finely diced 2 green onions, finely diced ½ cup plain yogurt ½ lemon, zested and juiced 2 tbsp fresh dill, finely chopped 4 cups mixed greens In a large bowl combine cooked salmon, celery, cucumber, green onions, yogurt, lemon zest and juice and fresh dill. Mix well and serve with fresh mixed greens. Store in the fridge for up to 3 days. Endive Boats 2-3 endives, larger leaves removed and reserved 1/2 cup blue or goat cheese, crumbled 1/2 cup red grapes, halved or quartered 1/4 cup walnuts, roughly chopped 1-2 tbsp honey To assemble boats, fill endive leaves with blue cheese, grapes & walnuts. Preheat oven to 350°F. 2. Spread hazelnuts in a single layer on a baking sheet. 3. Bake at 350°F for 10-12 minutes; be careful they don’t burn. 4. Transfer hazelnuts to a clean dish towel and rub vigorously to remove the skins. 5. Place the warm hazelnuts in a food processor and blend until they have the consistency of peanut butter; 5-7 minutes. Scrape down the sides regularly. 6. Add chocolate chips and blend until chocolate is totally melted and mixture is smooth. 7. If mixture is too thick, add vegetable oil ½ tsp at a time until you’ve reached your desired consistency. 8. Store in the refrigerator for up to 1 week. 9. Enjoy! Homemade Cookie Butter 2 cups cookie crumbs (any cookie you want!!!) ¼ cup butter ½ cup sweetened condensed milk 1. Add cookies to the bowl of your food processor and pulse until they become fine crumbs. 2. In a small saucepan melt butter over medium heat. 3. Stir in condensed milk until it’s completely combined. 4. Pour butter mixture into the food processor and pulse until the cookie butter is completely smooth. 5. Store in the refrigerator for up to 1 week. 6. Enjoy! Homemade Cranberry Apple Butter 2 cups fresh whole cranberries 8 apples 1 cup apple cider 1 cup maple syrup 2 cinnamon sticks 1. In a large Dutch oven or soup pot combine apples, cranberries, cider, maple syrup and cinnamon sticks. 2. Bring mixture to a boil then reduce heat to medium-low, cover and simmer. 3. After 30 minutes, use a potato masher to mash mixture and release the flavor from the apples and cranberries. 4. Simmer for 1 hour, stirring regularly, until the apples are completely soft. 5. Turn off heat and strain mixture through a fine mesh sieve into a second pot or a slow cooker. 6. Set heat to low and continue to cook for 2-3 hours or until the mixture has reached your desired consistency. 7. Store in the refrigerator for 2 weeks or in the freezer for 6 months. 8. Bottle all of the ingredients. 2. Allow them to infuse for 2-3 days before serving. 3. Store in the refrigerator for up to 2 months. Pumpkin Spice Liqueur 2 cups water 1 cup sugar 1 cup brown sugar 1 cup pumpkin puree 2 cinnamon sticks 1 slice fresh ginger 5 cloves ½ tsp grated nutmeg 1 vanilla bean, split lengthwise 2 cups rum or brandy 1. In a medium saucepan combine water and sugar. 2. Heat over medium high, whisking constantly, until the sugar is dissolved. 3. Add pumpkin, cinnamon, ginger, nutmeg, cloves and vanilla. 4. In a large skillet heat oil over medium-high heat. Sear chicken breasts, top side for 3-4 minutes or until the chicken releases easily from the pan. Flip chicken and sear for another minute. Add white wine OR chicken broth, garlic, onion and fresh thyme leaves. Reduce heat to medium-low, cover pan and cook for about 10 minutes or until the chicken reaches an internal temperature of 165°F. Flip chicken once or twice during cooking to ensure even cooking. Remove cooked chicken. In a small bowl whisk flour with water and then add it to the pan juices. Whisk gravy until it reaches your desired consistency. Serve gravy over cooked chicken. Store in the refrigerator for 3-4 days or in the freezer for up to 6 months. Roasted portabello mushrooms 2 large portabello mushrooms, chopped 2 tbsp balsamic vinegar 2 tbsp olive oil 1 tsp fresh thyme leaves salt and pepper In a large bowl toss portabello mushroomsm with balsamic vinegar, olive oil, thyme leaves, salt and pepper. Pour mushrooms onto a baking sheet. Bake at 375°F for 10-15 minutes. Store in the refrigerator for 3-4 days. Massaged Kale 1 bunch kale, stem removed and finely chopped 1 tbsp olive oil ½ lemon juiced salt In a large bowl season kale with olive oil, lemon juice and salt. Massage for 1-2 minutes or until kale turns bright green and starts to soften. Store kale in the refrigerator for 3-4 days. Red Skin Potato Salad 4-6 red skin potatoes, cubed 2 tbsp olive oil 2 tbsp red wine vinegar 1 tsp Dijon mustard ¼ cup green onions, chopped fresh dill fresh parsley salt and pepper Steam or boil potatoes until they are fork tender but not mushy. Run them under cold water to stop the cooking process. In a small bowl whisk red wine vinegar, olive oil and Dijon mustard. In a large bowl toss potatoes with dressing, green onions, dill, parsley, salt and pepper. Store in the refrigerator for 4-5 days. Herb & Garlic Goat Cheese Dip ¾ cup goat cheese, room temperature ½ cup sour cream 1 clove garlic, pureed or grated fresh chives, finely chopped fresh basil, finely chopped fresh parsley, finely chopped salt and pepper In a medium bowl mix goat cheese with sour cream, pureed garlic, chives, basil, parsley, salt and pepper. Store in the refrigerator for 4-5 days. Turn off the heat and whisk in cocoa powder and brown sugar. Let mixture cool. In a bowl, mix flour, sugar, baking soda and salt until well combined. Using a hand mixer or stand mixer, combine stout mixture with eggs and sour cream. Scoop batter into muffin tin lined with cupcake liners. Bake at 350°F for 20-25 minutes. Allow to cool completely before icing. For the frosting, beat butter until light and fluffy. Slowly add icing sugar and mix on low until frosting has come together. Add Irish cream liqueur and mix until combined. Transfer to a piping bag. Pipe frosting onto each cupcake. Finish with a dusting of cocoa powder. Enjoy!! Homemade Irish Cream 1 tsp espresso powder OR instant coffee granules 1 tbsp cocoa powder ½ cup heavy cream 1 can sweetened condensed milk 2 tbsp sugar 1 tsp vanilla extract ½ cup Irish whiskey (optional) In a large mixing bowl, combine instant espresso and cocoa powder with 1 tablespoon of cream. Whisk until it forms a smooth paste. Add the remaining cream, condensed milk, vanilla extract and Irish whiskey. Transfer to jar and store in the refrigerator. Add garlic and cook for 30 seconds. Add quinoa, chicken broth and white wine and bring mixture to a simmer. Reduce heat to low, cover and simmer for 15-20 minutes. Add shrimp and asparagus, cover and cook for another 3-4 minutes or until shrimp is fully cooked. Finish with lemon zest, lemon juice, parsley, red chili flakes, salt and pepper. Add beef and cook, stirring often, until it is browned on all sides. Using a slotted spoon, transfer beef to a bowl and set aside. In the same pot add onion, green bell pepper and mushrooms. Cook for 5-7 minutes or until they are softened. Add garlic and cook for another 30 seconds. Add flour and cook for an additional minute stirring constantly. Add the cooked beef, beef broth, Worcestershire and hot sauce and bring mixture to a simmer. Reduce heat to medium and cook for 10 minutes. Turn the broiler on high. Ladle stew into heat safe bowls and top with croutons and provolone cheese. Roast Beef Grilled Cheese Mushroom Filling: 1 tablespoon butter 1 cup sliced mushrooms 1 garlic clove, minced Salt and freshly cracked black pepper Grilled Cheese: 1 teaspoon butter 2 focaccia slices 1 tablespoon steak sauce 4 provolone slices 4-5 roast beef slices 1/4 cup crumbled blue cheese 1/2 cup arugula 1/8 red onion, thinly sliced Melt the butter in a skillet over medium-high heat. Add the mushrooms and cook until they begin to release their juices, 2 to 3 minutes. Add the garlic and season with salt and pepper to taste. Continue to cook until the mushrooms begin to brown, 2 to 3 minutes. Spread half of the butter on a piece of bread and place it butter side down. Assemble the sandwich with the remaining ingredients. Top with the remaining piece of bread and spread the remaining butter over the top. Cook over medium heat on both sides until the bread is golden and the cheese has melted, 2 to 3 minutes per side. Green Goddess Grilled Cheese 1/4 cup goat cheese, at room temperature 1/4 cup shredded white cheddar cheese 1 tablespoon chopped parsley 1 tablespoon chopped tarragon 1 tablespoon chopped chives 1 garlic clove, grated 1 teaspoon butter 2 pumpernickel slices In a small bowl, mix together the goat cheese, cheddar, herbs and garlic. Spread the cheese and herb mixture over a piece of bread and sandwich it together with another piece. Spread butter on the outside of the bread on both sides. Cook over medium heat on both sides until the bread is crisp and the cheese has melted, 2 to 3 minutes per side. Fully Loaded Grilled Cheese 1/2 cup diced cream cheese 1 tablespoon sour cream 1 teaspoon chopped chives 1 teaspoon butter 2 crusty French bread slices 1/4 cup shredded cheddar cheese 4 slices cooked bacon 1/4 cup crinkle cut chips In a small bowl, cream together the cream cheese, sour cream and chives. Set it aside. Spread half of the butter on a piece of bread and place it butter side down. Spread a layer of the cream cheese mixture over the bread. Top with half of the cheddar, bacon, chips and the remaining cheddar. Spread a layer of the cream cheese mixture over the remaining bread slice and sandwich everything together. Spread the remaining butter over the bread. Cook over medium heat on both sides until the bread is golden and the cheese has melted, 2 to 3 minutes per side. Cheeseburger Grilled Cheese 1 lb ground beef 1/2 cup chopped onion 3 tablespoons ketchup 2 tablespoons mustard 2 tablespoons Worcestershire sauce 2 hamburger bun bottoms 1/4 cup shredded cheddar cheese 2 pickle slices 2 tomato slices In a large skillet over medium-high heat, add the ground beef. Cook, stirring, until it is no longer pink, 4 to 5 minutes. Add the onion and continue to cook until the onion softens, 2 to 3 minutes. Season the beef with the Worcestershire sauce, ketchup and mustard. Remove the beef mixture from the pan and set aside. Use a half of a cup of the beef mixture per grilled cheese. Carefully wipe the skillet clean and assemble your grilled cheese. Spread the butter on one side of each bun. Fill the bun with all of the fillings, starting and ending with the cheese.
