Banana brunch loaf recipe: Ingredients Mini loaf pans 3 large eggs 3 large ripe bananas 2 cups almond flour Couple dashes of ground cinnamon (ceylon) 1 teaspoon baking soda Nuts (optional) I used pecans Food grade green food dye (optional) Topping Unsweetened applesauce Pomegranate perils -Preheat oven 350°. Line pans with parchment paper straps, leaving overhang. -Whisk eggs and mashed banana -Gradually whisk in almond flour, cinnamon, baking soda until smooth -If adding green food coloring and nuts, mix in now -Scoop mixture into loaf pans filling nearly full to tops -Bake 40-50 minutes (oven times may vary) just make sure browned and set. Use toothpick to make sure center comes out dry. -Remove loaves and allow to cool -Slice and add toppings
