When Olmsted, one of Eater NY’s 38 best restaurants, was forced to close its dining room, chef Greg Baxtrom sprang into action. He and his team pivoted to making 400 free meals a week for healthcare workers, preparing dishes for a food bank they set up, and transitioned the dining room into a “trading post” so the public can buy their supply of sauces, meats, wines, and help keep the business afloat.
