Once heated, stir in onions, jalapeno and garlic along with a pinch of salt. Allow to cook for about two minutes or so. Stir in bell peppers and cook another two minutes. Add squash, curry, chili powder, and cumin and give everything a good stir. Add beans, tomatoes, and broth. Turn heat to high and bring everything to a boil. Once boiling, reduce to a simmer and cook until the butternut squash is tender, about 10-15 minutes. Add kale to the pot and cover for about 5 minutes or until it wilts down. Give everything one last stir… taste it… does it need anything else?? If not finish it with some chopped cilantro and enjoy!! Gently toss until well combined. Transfer hummus into your favorite serving dish and top with tomato mixture. Serve with fresh veggies and pita chips. Enjoy! BLACK BEAN CORN AVOCADO SALAD https://tinyurl.com/CDBlackBeanSalad 15 ounce can of black beans, drained and rinsed 1 heaping cup of fresh corn kernels (about 2 ears) 1/3 cup diced red onion 1 bell pepper diced 1/3 cup chopped cherry tomatoes 1 avocado, chopped 1/4 cup chopped cilantro 1 clove garlic 2 tbsp. fresh lime juice 1 tbsp. extra virgin olive oil DIRECTIONS: Combine everything into a large bow and mix well. Serve and enjoy! GRASS FED TURMERIC BURGER RECIPE https://tinyurl.com/CDTurmericBurger 1 pound grass-fed ground beef 1 teaspoon ground turmeric 1 teaspoon garlic powder 1 teaspoon kosher salt 1 teaspoon ground black pepper 1 head of butter lettuce DIRECTIONS: Combine all the ingredients in a large bowl and mix with your hands until everything is just combined. Free form four burger patties and cook on a medium-high grill for 4 minutes on each side (for a medium burger). Serve each burger on a some butter lettuce (I like using 3-4 pieces for a sturdy burger bun) and top with Black Bean Corn + Avocado Salad (or with any toppings you prefer). Enjoy! SIMPLY GRILLED ASPARAGUS https://tinyurl.com/CDAsparagus 1 bunch of asparagus, trimmed 2 teaspoons extra virgin olive oil or cooking spray Salt and pepper to taste DIRECTIONS: Preheat grill over medium high. Drizzle olive oil over asparagus and season with salt and pepper. Use your hands to roll the asparagus around a bit to be sure it is lightly coated in the oils and seasonings. Pop them on the grill, turning the spears once or twice, just until the thickest part of the asparagus is fork tender. They will take between 5-10 minutes depending on their size. Enjoy! Add in onion and a pinch of salt. Once the onions are beginning to look translucent (it takes about 5 minutes) add in the belle peppers and garlic. Cook for a couple more minutes, or just until you take the raw edge off of the garlic. Push all the veggies to one side of the pan and add in the ground turkey. As the turkey cooks, use your spatula to break the meat up into little crumbles. Once the turkey is no longer pink and beginning to brown on the outside add the taco seasoning, salsa, water and corn to the pan and mix everything together so that the veggies and meat are lightly coated with the spices. Once everything is heated through, shut off the heat and build your lettuce cups. I like to scoop the mixture in romaine lettuce cups and top with some chopped radishes and avocado but feel free to use your favorite taco toppings. Enjoy. BUFFALO CHICKEN LETTUCE WRAPS https://tinyurl.com/y8maaguj 2 teaspoons olive oil 1/2 onion, diced 1 cup diced celery 1 cup diced carrots 2 cloves garlic, diced 16 ounces shredded chicken (I like to use a rotisserie chicken) 1 tablespoon onion powder 1 teaspoon smoked paprika 1/2 cup hot wing sauce (this is the one I like) 1 head of butter lettuce *Optional toppings: blue cheese dressing + sliced scallions DIRECTIONS: Heat olive oil in a large non-stick skillet and then add in onion along with a pinch of salt. Allow the onions to cook for about 5 minutes or until they are translucent. Add in celery, onion, and garlic and cook for another couple of minutes. Add shredded into the pan along with the onion powder, smoked paprika, and wing sauce. Gently toss everything together until all of the chicken and veggies are coated with the seasonings and sauce and heated through. Shut off the heat and scoop filling into your lettuce cups. Top each one with a drizzle of blue cheese dressing and fresh chopped scallions. Enjoy! Drizzle with extra virgin olive and season with salt and pepper. Toss everything together until the brussels sprouts and grapes have a nice light coating of the olive oil and seasoning. Spread everything out a rimmed baking sheet and roast for 25-30 minutes, flipping half way through, until Brussels sprouts are golden brown. Transfer to your favorite serving dish and drizzle with 1 tablespoon balsamic glaze. Enjoy! Serves 4. Coat a rimmed baking sheet with cooking spray and set aside. Heat a large non-stick skillet over a medium heat and add 1 teaspoon of olive oil. Add in the onion with a pinch of salt and saute for a couple of minutes or until fragrant. Add in the mushrooms and garlic and saute for another 5 minutes or until the onions are translucent and the mushrooms are tender and browned. Shut off the heat and set aside. In a large bowl combine quinoa, cooked veggies, bell peppers, salmon, egg, coconut flour, salt, pepper, and parsley. Gently mix everything together until well combined. Scoop up about 1/3 cup of the mixture and form into a small patty (like burger slider!) Bake at 350 for 25 minutes. Serve on a mini slider bun with some baby spinach and my yogurt dill dip. Enjoy! Makes 8 sliders Nutrients per slider (no sauce, no bun) Calories: 86; Total Fat: 4.1g; Saturated Fat: 1.2g; Cholesterol: 29mg; Sodium 36mg, Carbohydrate: 5.1g; Dietary Fiber: 1.3g; Sugars: 1.1g; Protein: 7.4g FARRO SUMMER SALAD RECIPE https://tinyurl.com/CDFSalad 1 cup COOKED farro (or any leftover grain you have on hand) 1 cup chopped cucumbers 1 cup chopped tomatoes 1/4 cup diced red onion 2 tablespoons pesto (you can make it fresh or use store-bought) Salt and pepper to taste Combine all of the ingredients in a large bowl and gently stir until everything is coated with the pesto. Adjust seasoning, serve and enjoy! Makes 4-3/4 cups servings. Nutrients per 3/4 cup: Calories: 88; Total Fat: 3.4g; Saturated Fat: 0.6g; Cholesterol: 0mg; Sodium 77mg, Carbohydrate: 12.6g; Dietary Fiber: 2g; Sugars: 2.1g; Protein: 2.5g OATMEAL COOKIE RECIPE https://tinyurl.com/CDOatCookie 1.5 cups oatmeal 1 cup white whole wheat flour 1/2 cup light brown sugar 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1/3 cup melted coconut oil 1/3 cup applesauce 1 tablespoon ground chia seeds 3 tablespoons water 1 teaspoon vanilla extract 1/3 cup chopped walnuts 1/2 cup raisins Preheat oven to 350ºF/176ºC. Line a rimmed baking sheet with a silpat mat or parchment paper (you can also just spray the pan with some cooking spray. You choose!). In a large bowl combine oatmeal, white whole wheat flour, light brown sugar, cinnamon, baking soda, and kosher salt. Gently toss everything together. Combine ground chia seeds with water in a small bowl and let rest for 5 minutes or until thickened. Add in coconut oil, applesauce, chia mixture, and vanilla extract. Mix everything together until you have a thick, cookie-dough consistency. Add in the walnuts and raisins, stir until they are evenly distributed thought out the batter. Scoop up a tablespoon of dough and use your had to form a ball, place on the baking sheet and squish down a bit with your fingers so they look like fat discs. These cookies down spread a lot once they cook, so you want to form them into a cookie shape before baking. Bake for 10 minutes or until lightly browned on top and set through. Repeat until you have used all of your dough. Cool, eat and enjoy! *Storage: I like to keep these stored in an airtight container on my counter for up to 5 days. You can also store them in the fridge or pop them in the freezer. Makes 20 cookies.
